Tater tots, Tweaked Taco and cheese! This is one of those meals that you can throw together with ingredients easily found in your kitchen. Great for a potluck or a quick meal for unexpected company. Onion and garlic can be omitted for picky eaters.
Ingredients
- 1 lb ground meat of choice
- 1 small onion, diced
- 1 clove garlic, minced
- 3 TBS Tweaked Taco seasoning mix
- 1 (16oz) bag frozen corn (Mexican-style makes this recipe pop!)
- 1 can black beans, rinsed and drained
- Shredded cheese (original recipe called for 12oz Mexican blend but we use what we have on hand and always use a bit more!)
- 1 (16 oz) package frozen tater tots
- 1 (12 oz) can enchilada sauce
Instructions
- Preheat oven to 375*F. Prepare a 9x13-inch baking dish with cooking spray.
- Cook the ground meat in a skillet over medium heat until completely browned. Add the onion, garlic, Tweaked Taco seasoning, frozen corn, and black beans to the skillet; cook and stir another 10 minutes. Set aside to cool slightly.
- Combine the ground beef mixture in a large bowl with about 3/4 of the cheese and the tater tots; stir to combine.
- Pour about 1/3 of the enchilada sauce into the bottom of the prepared baking dish. Add the tater tot mixture to the baking dish; lightly pat the mixture down into a solid, even layer. Pour the remaining enchilada sauce over the mixture.
- Bake in the preheated oven for 40 minutes. Sprinkle the remaining cheese over the casserole and return to oven until the cheese is melted and bubbly, about 5 minutes more.
